Apple Crumble Cupcakes

This year, I am extremely excited that Autumn has finally arrived with its graceful winds and warm colors. With the entrance of candles, fairy lights, hoodies and cuddles comes baking!

I wanted a recipe which I felt would be the epitome of what Fall looks, smells and tastes like. Whilst on YouTube (maybe binge-watching all of Zoella’s videos, I finally found an Autumn-tastic match: Apple Crumble Cupcakes! A recipe filled with apples, cinnamon and brown sugar? COUNT ME IN!

This recipe is broken down into four sections, which contain the ingredients and directions for each: cupcakes, crumble, icing and decoration. I mostly followed everything Zoe so beautifully executed, only changing the measurements since the UK and US follow different systems. But without further ado, below is how they turned out (they taste AH-mazing!) and underneath you will find everything you need to try it out on your own.



Ingredients / Supplies:

  • 2 eggs
  • 2 cups of flour
  • 1 tsp of vanilla extract
  • 3/4 cup of superfine sugar
  • 2 tsp of baking powder
  • 1 tsp of ground cinnamon
  • 1/2 tsp of salt
  • 1/2 cup of unsalted butter
  • Pot
  • Mixer


  1. Skin, core and chop up apples into small squares (or used already sliced apples to make it easier, but still skin them)
  2. Put apples in small pot, cover in water and let simmer for 5-7 minutes until they are soft
  3. OPTIONAL: Add 1 tbs of superfine sugar to the pot to make the apples a little sweet
  4. In a bowl, mix butter and sugar until it looks fluffy
  5. Add eggs and vanilla extract, then mix once again
  6. Mix in flour, baking powder, cinnamon and salt
  7. When done, add apples and mix with a spoon (you can add as much as you like, as well as leave some for decorating in the end)
  8. At this point, preheat oven to 340 degrees Fahrenheit
  9. Spoon batter into cupcake cases half way, which lie in a muffin pan
  10. Put in the oven for 15- 20 minutes until a toothpick comes out clean


Ingredients / Supplies: 

  • 1/3 of sugar
  • 1/2 cup of salted butter
  • 1 cup of self-rising flour
  • 1 tsp of vanilla extract
  • 1/4 tsp of ground cinnamon
  • Baking Paper
  • Baking Tray


  1. Put butter in a bowl
  2. Add flour, cinnamon and vanilla extract
  3. Mix with hands until it looks and feels like bread crumbs
  4. Add sugar, then mix with a spoon
  5. Place flatly on baking paper on a baking tray
  6. Put in for 5-10 minutes, keep checking until golden


Ingredients / Supplies:

  • 1 tsp of cinnamon
  • 1 tsp of vanilla extract
  • 2/3 cup of brown sugar
  • 1 cup of unsalted butter (room temperature)
  • 2 cups of powdered sugar
  • 2 tbsp of milk
  • Mixer
  • Piping bag


  1. Mix butter, brown sugar, cinnamon and vanilla extract for about 5-7 minutes, until it looks light, fluffy and creamy
  2. Add powdered sugar little by little
  3. Add milk until it feels consistent


  1. After cupcakes and crumble are completely cooled, take out of tray to decorate
  2. Spoon icing into piping bag, squeeze down, twist bag and put to side
  3. Smear a little icing on top of cupcakes
  4. Put some crumble on top of each
  5. Use piping bag to swirl icing on top
